Update for Week 4 Phase 3

So this is a day late - no surprise with everything I have going on.  I am feeling a teeny bit discouraged as I had to go in for blood work for my hormone levels and found out Friday that all hormone levels have completely crashed again (I thought my tiredness was due to the whole stress of baby Izze's adoption going to litigation).  Last year when I tested, my estrogen was on the high side of normal and everything else was practically non-existent.  With all the work I have done with diet and exercise I was pretty confident I would have much improved levels.  What a let-down....  The good news is that I can change my prescription and actively do something about my hormones (which is a lot more than I can say about litigation!).  I started my new medication on Friday night and am keeping an eye on things - if I am not much improved by Valentine's day I will have to go back for additional testing.  So I guess I should be super elated that my weight is staying very constant through this holiday season.  Started some new exercises this week and am definitely feeling it (am I sick to say I actually really like that feeling?).  Hoping you are all having a safe and joyous holiday season!  If you are not sticking to your eating plan, you can always start again January 1st, right?!

Just FYI - due to pending litigation I am unable to give much in the way of details on baby Izze.  We did go to court today - just a bunch of nothing once again.  We do not have another hearing for a month. Not really seeing a light at the end of the tunnel, but trying to trust in the Lord's timing.  We do feel grateful to still have her in our home.  Thanks for your continued prayers on our behalf.  We feel your faith and strength on our behalf and extremely grateful.  May God bless you all through the coming year!  Merry Christmas to you!

I like to double this batch when I make it.
They freeze well, and are perfect to pull out when you need to put together a quick plate of treats for a friend--just give them a fresh dusting of powdered sugar when you load them up on the plate.

3/4 c butter, room temp
1 tsp vanilla
1 TBS water
1/8tsp salt
1/3 c sugar
1 1/2 c flour
(this time I added a pinch of cinnamon, just for kicks)
1 c chocolate chips
1 c chopped pecans or walnuts (I like pecans)
Powdered sugar, for dusting.

Cream butter, vanilla, water, sugar and salt. Add flour and mix well. Stir in chocolate and nuts.
 Form into 1” balls. Bake at 350° for 20 minutes. Cool for a few minutes. Roll in powdered sugar (or "make it snow" on top of them) while still warm.

I Freakin' LOVE Christmas!

I freakin' LOVE Christmas!  I love the decorations, the family traditions, and the good will demonstrated so freely during this season.  My birthday, Christmas, and Anniversary also fall in December, thus explaining my obsession with Santa!  I have nearly 100 Santas in my collection and love each one.  Many have a special story behind them and the real "Christmas" to me is unpacking each one and putting them on display throughout my home.  Please understand that I KNOW that Christmas is to celebrate the birth of Jesus Christ - and I love Him with all my heart.  I LOVE the things that Santa represents to me - giving without expectation (interesting that Christ did the same, no?), the element of surprise (gifts are wrapped up and NEVER divulged by the giver), Santa keeps a list of naughty and nice (I'm pretty sure someone else does too!), and he has an awesome face - filled with a special kind of beauty and love (thinking this also applies here).  So grateful this time of year for a reason to stop and reflect and spread the love.  Hope this finds you and yours doing the same!
